I’m in the throes of prepping for Japan (#日本in29days!) and have way more to do than I can handle. My brain is fried, and I desperately want to do nothing and eat hummus.
Snuggling up with a good movie and good food is what’s on my mind, so I thought I’d share my snack-time favorites with you!
1) Hummus and vegetable chips
I’ve shared my veggie chip addiction before, and I largely have hummus to thank for it. I love salty and crunchy – add the creamy of homemade hummus and I’m gone.
2) Guac and vegetable chips
Do you see a theme?
1-3 Avocados (depending on size)
1/2 of a medium red onion
2-3 cloves garlic
1 T. (ish) cilantro (dried – increase amount for fresh)
1/4 t. (ish) Black Pepper
1/2 t. (ish) salt
1/4 c. lemon juice
Blend or mash to taste. Also, this recipe is not exact, so play with it.
I guesstimate. That’s what makes it easy, right?
3) Chocolate Dates
You may have seen this in my email last month, but I LOVE chocolate covered dates. Frozen. With Pecans. Sooooo good. Super simple, too:
No-Sugar-Added Chocolate Date Bites
1. Melt half a bar unsweetened bakers’ chocolate with enough butter or coconut oil to thin – about 1 part oil to 2 parts chocolate.
2. While chocolate melts, chop up a cup (or two) of unsweetened medjool dates. When chocolate is smooth, dump in dates and mix well. Add a handful or two of pecan halves.
3. Spread the mixture on a parchment-papered plate and freeze. When solid, break into bite-sized chunks and enjoy.
Extras can be stored in the freezer in a sealed container.
